[On-Site Interview] A Multifaceted Life: Culinary Geek, Les Mills Instructor, and Always a Scientist

Simon holds a PhD in Nutritional Science, is a former CEO of a digital health technology start-up, a scientific marketing expert, a culinary geek, and a Les Mills instructor. His resume is dazzling, but he says, "No matter how my roles change, my main thread as a scientist has never wavered."

Whether researching how diets affect human health in the lab at Tufts University, deconstructing food textures and sensory impacts in a Michelin restaurant kitchen, refining the storytelling power of health products with scientific data, or leading participants to new heights in the cycling studio—Simon always lives, makes decisions, and embraces the world through the lens of a scientist, seeking out the light.

In this Foodtalks interview, we will hear Simon share how he maintains a path to authenticity, rationality, and passion amidst seemingly diverse identities. How does he perceive humanity within fact-based science and understand the boundaries between science and emotion? And how does he find balance among his many roles?
