Every morning, go to the cattle farm to carefully select fresh slaughtered beef hind legs, and deliver them to the processing plant within half an hour. The slaughtering and processing are seamlessly integrated to ensure that the meat is fresh and not dehydrated. Artificial shaving of tendons to remove fat ensures tender meat quality, and then finely cuts it into pieces. Through machine simulation of the ancient method of hand pounding beef, fresh beef is pounded into a pulp, stimulating the gelation of beef protein and ensuring the integrity of meat fibers. During the pounding process, appropriate ice cubes are added to ensure the freshness of the minced meat. Add appropriate amount of starch, salt, garlic paste and other ingredients to evenly taste Chaoshan beef balls. Each beef ball should be slowly cooked at 55 ℃ for 10 minutes to make the Rice-meat dumplings smooth, and then cooked at 90 ℃ for 30 minutes to ensure 40 minutes of cooking and activate the soul of Rice-meat dumplings. Finally, the beef balls were picked up and dried. After 15 minutes -48 ℃ spiral quick freezing, the elasticity of Rice-meat dumplings was strengthened again according to the principle of thermal expansion and cold contraction, which not only ensured that the Rice-meat dumplings were instantly fresh and elastic. Each Chaoshan beef ball has a golden ratio of 28-30 pieces per kilogram.
