Company Introduction

Fujian Xinmai Food Co., Ltd. was established in 2012 and is located in Lantian Economic Development Zone, Zhangzhou City. Mainly engaged in the research and development, production, and sales of Western style baked goods such as cakes and bread. The company currently has nearly 500 employees and a total area of 27000 square meters. The production workshop is designed and constructed according to a 100000 level purification workshop, with 6 fully automatic long shelf life bread production lines, 2 cake production lines, and 1 short shelf life bread baking pastry production line. The daily production capacity is 160 tons, and the annual output value can reach 800 million yuan. The company has obtained ISO22000 and HACCP food safety management system certifications.

Product concept, highlights and added value

Product positioning: to create a modern healthy meal replacement toast bread without preservatives, additives and flavorings.

Information communication and appearance design: clearly indicate "0 preservatives, 0 flavorings" on the packaging, and convey the pursuit of naturalness, purity and health through hand-drawn cow images.

Packaging functionality and product experience: adopt easy-to-open and close box cover design, use independent packaging for inner bags, and add a handle on the top of the box for easy carrying when going out.

Research and development concept and product highlights: returning to nature, enjoying purity, and preserving the natural taste of high-quality raw ingredients; no additives, no water added during dough kneading, only pasteurized fresh milk selected, with a fresh milk addition of ≥20%; adding New Zealand whole milk powder and Anchor butter; using the "old dough low-temperature" fermentation method to make the taste softer and fluffier.

Raw materials and nutrition: imported wheat is used, combined with Japanese flour milling technology to produce special wheat flour with high protein and low ash content, resulting in a more chewy taste; selecting high-quality New Zealand whole milk powder and Anchor butter to give the bread a delicate texture and rich nutrition; selecting local fresh milk, only pasteurized, resulting in a stronger milk flavor and richer nutrition.

Innovation difficulties and pain point solutions: maintaining the freshness and taste of bread without the use of preservatives is a very challenging task; adopting scientific formula design and process control to keep the water activity of the bread at a low level, inhibiting microbial growth; using a dust-free air purification workshop and automated equipment to reduce the risk of personnel contact with and transmission of microorganisms; adding a fresh-keeping packet inside the packaging bag that continuously emits edible alcohol to inhibit microbial growth and reproduction.

Pain points: Toast bread purchased from bakeries often has a short shelf life and is inconvenient to store. Toast bread purchased from online e-commerce platforms often contains a lot of additives and preservatives, which is not conducive to physical health. Based on these reasons and pain points, we are dedicated to researching and developing a delicious, healthy, and fresh toast bread.
Solution: After carefully studying and simplifying the ingredient formula, on the premise of ensuring the taste, we have removed emulsifiers, water retaining agents, colorants, preservatives, food essence and other additives, and repeatedly tested and blended high-quality natural raw materials to achieve the best taste. In terms of raw materials, we use imported wheat with advanced Japanese milling technology for processing; Select New Zealand whole milk powder and Anchor butter; Selected from locally pollution-free fresh milk, only treated with pasteurization to preserve nutrients to the greatest extent possible, resulting in a richer milk flavor and richer nutrition
